Getting better scores
The Food Standards Agency has a range of tools, such as Safer food, better business
(external link), that can help you manage food hygiene. You
can find out more about these on the hygiene resources page of the
Agency’s website (external link).
You should be able to show us that:
- staff have high standards of personal hygiene
- there are control measures in place to prevent cross
contamination
- foods are stored at the correct temperature
- foods are properly cooked, re-heated and cooled
Your premises should:
- be suitable for purpose, clean and in good repair
throughout
- have adequate natural/artificial lighting and ventilation
- be sufficiently proofed against pest entry
Ideally documentation should:
- identify and show an understanding of the food safety hazards
(microbiological, physical and chemical) within the business
- provide evidence that measures have been taken to effectively
control hazards
- provide evidence that all food handlers are trained and
supervised
Remember, it is a legal requirement for food businesses to
provide documentary evidence that the food they produce is
safe.
